This is not my favorite fried rice but you need Chinese sausage for that one ( is posted under Best Ever Fried Rice) but this is very good and a way to use up leftover ham a little differently.

3 cups cooked cold white rice
2-1/2 T oil
3 large eggs, beaten
3 cloves garlic, minced
5 oz diced ham
1/2 cup peas and carrots, thawed
Salt to taste

Seasonings:
1/2 T soy sauce
1-1/2 T fish sauce
1/4 t sesame oil
3 dashes white pepper

Gently break up rice. Mix ingredients for seasonings in a small bowl and set aside.

Heat 1/2 T oil in a wok over high heat. Pour in the eggs and cook until just starting to set. Break egg into small pieces and remove.

Reheat wok over high heat and add 1 T oil. Add minced garlic and stir fry 30 seconds. Add ham and stir fry until slightly browned. Add peas and carrots. Stir quickly to combine ingredients. Add rice and combine everything evenly.

Stir in seasonings blending well with rice. Return cooked eggs to wok and combine with rice. Keep stirring until rice is slightly toasted (about 3 minutes).

This serves 2 as a main dish or 4 as part of a meal.
