Oh my word! Thanks to everyone for contributing recipes.

It took me quite a long time to go to sleep last night, so I was rather groggy, until I saw the wonderful recipes that all of you provided. Some recipes are quite similar to ones I have in my stash which remains in storage in San Diego, but will make its way up here in May - maybe. I've missed those recipes so much. Only brought the neccesaries when we moved. The remainder are brand new and I will embrace them with a big hug as well. Thanks so much.

I just last night made two recipes that were new to me. I have so many lemons right now, I have also been looking for lemon recipes. You will have to look these up as I do not know how to include them on my iPad . I made Engagement Chicken from allrecipes.com and Magic Lemon Meringue Pie from Eagle Brand. Both were exceptionally good. I am planning to make the lemon spaghetti soon and would love to try the others listed. I may even make some limoncello. Have fun with your lemons!

This recipe is just one of many Greek Style Lemon Roasted Potatoes recipes I enjoy and also make with Greek Oven Roasted Leg of Lamb, fish, and Beef.

Greek Style Roasted Potatoes

Greek Style roasted potatoes are packed with lemon and garlic flavor, this dish goes well with roasted meats.

Ingredients
  • 5 or 6 medium-large russet potatoes
  • Salt, preferably coarse sea salt
  • Freshly ground black pepper
  • 3 garlic cloves, coarsely chopped
  • 1 cup water
  • 1/2 cup olive oil
  • 1/4 to 1/3 cup lemon juice
Instructions

Preheat the oven to 450 degrees F.

Scrub the potatoes well, but don’t peel them. Cut them lengthwise into quarters. If potatoes are extremely large, cut each potato into eight wedges. Place the potatoes in a 9 x 13-inch baking pan. Season the potatoes with salt and pepper. Add the garlic to the potatoes. Mix the marinade by combining the water, olive oil, and lemon juice. Pour the marinade over the potatoes. Be sure to cover all of the potatoes.

Roast the potatoes for about 40 minutes, then remove the pan from the oven. Turn the potato wedges so all sides can brown. Do this by flipping the “white” top side of the potato onto the bottom of the dish. Place the potatoes back in the oven and roast for an additional 20 to 30 minutes. When you remove the potatoes they will be nice and golden brown all over, and will have absorbed the marinade.

Thanks to both of you for site suggestions and adore for your Greek Potatoes.

DH and I enjoy various cuts of lamb, so will absolutely enjoy including these potatoes in with our lamb dishes.

Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.

I just made this the other day but the next time I make it I would put 2 tsps. of lemon extract and omit the vanilla. I think it would be a little bit more lemony. It is a good recipe though.

Lemon Cake

Cake:

1 pkg. lemon cake mix

1 pkg. instant lemon pudding

3/4 cup each: vegetable oil; water

4 large eggs

Glaze:

2 cups confectioners sugar

1/3 cup orange juice

2 teaspoons each: vegetable oil; water

Heat oven to 325 degrees. Combine cake mix, pudding mix, oil and water. Beat until blended. Add eggs, one at a time, beating well after each addition. Pour batter into a 9 x x13" pan sprayed with cooking oil spray. Bake until toothpick comes out clean...about 40 minutes.

Combine all glaze ingredients in a medium bowl. Poke holes in hot cake with a fork. Pour glaze over top. Cool.

Layered Lemon

First layer:
2 cups flour
1 cup butter or margarine
1 cup finely chopped pecans

Second Layer:
2 (8 oz.) pkg cream cheese, softened
1 cup icing sugar
1 cup whipping cream (whipped)

Third Layer:
2 pkg lemon pudding and pie filling (each makes one pie)

Fourth Layer:
2 cups whipping cream
2 Tbsp sugar
1 tsp vanilla

Mix flour, butter and nuts together until crumbly. Press into 9 x 13 pan. Bake for 15 min at 350F,
Cool. Beat cream cheese and icing sugar together. Whip cream. Fold into cream cheese mixture and spread on cooled crust. Prepare pie fillings according to package directions and pour over cream cheese layer when slightly cooled. Beat whipped cream and add sugar and vanilla. Spread onto set lemon layer.Garnish with chopped pecans if desired.

I am definitely a dessert person, so really, really appreciate your recipe gifts. Narcisse, your layered dessert has me drooling right now. Though all the recipes provided are wonderful, I'm intrigued by your layered one. May have to get to the market today so I can make this sooner than later.

RECIPE - Starbucks Lemon (Bread Pan) Cake

~~~~ I just made this last week and it is very good and lemony. I plan to make it for a church function tomorrow and will add some blueberries (thinking about 1/2 to 3/4 cup) to the mix, making it something like a lemon/blueberry coffee cake.
