Some kind soul recently posted a recipe that called for 3 or 4 over-ripe bananas, a box of yellow cake mix, 2 eggs, plus nuts or chocolate chips or whatever.  I'm going to make it tomorrow, however in light of @homedecor1 's disaster, I'm wondering if substituting a can of pumpkin puree plus appropriate spices would work?  I may try it after I finish off the bansna bread.

I've made it in the past.

1 box of Spice cake mix

15 oz can pumpkin

2 eggs

 

Bake at 350 for about 30 min.

Cream cheese frosting is good on it.  Or your suggestion of choc chips and nuts.

@Kachina624 - You're welcome to add the eggs, but you actually don't even need them; you can totally just combine a 15-oz can of pumpkin puree with a boxed cake mix (try spice or devil's food cake if you're not set on the yellow) and bake it in a 9x13" pan at 350 for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

ETA: If you do the devil's food version, it just tastes like moist chocolate cake, not pumpkin. Smiley Wink

So I guess if you made a scratch cake and left out the liquid that should work as well. . .

@Kachina624 - Sounds good! Note that the pumpkin approach makes a fairly dense cake...

@Desertdi.  Go get yourself a cake mix and a can of pumpkin tomorrow and live it up.  

 

It's supposed to be cold and rainy here tomorrow.  What a treat!  Worst week of weather for the whole year and we're trying to do a balloon fiesta.
