Crystalization is normal. It seems to happen more with local honey than what I've ever purchased from a store. If you warm it, the sugar crystals will dissolve but it could separate again. It's important to be sure you don't over heat your honey. Heat some water in a saucepan until it's very warm but not boiling. Turn off the heat and let the jar stand in the hot water. .
