I eat honey for my allergies.  My doctor told me it takes a few months to really help.  I have to eat honey that is cultivated no further than 50 miles from my home.  I buy it at our farmers market.  I have noticed that it crystallizes so much quicker than commercial honey I but at the grocery store.  Does anyone know why this might be?

Re: Why does my honey crystallize?

@GSPgirl, Yours may be unfiltered, or it may be the factory processed honey is heated somewhat. Given a choice between the two, I'd prefer the honey from the farmers market.

Re: Why does my honey crystallize?

@GSPgirlHey , now, That's a good idea!  Local unfiltered honey would have been collected from your local flowers with the local area pollens you are exposed to.  Thats' a great idea!  I Love getting nifty info like this on these boards.  Thanks!

Re: Why does my honey crystallize?

@BeccaLou, before microwave we'd hold honey in a bowl of very hot water. Lid off or cap opened. If lazy, sometimes just holding the open jar under hot running water was enough.
