Why does my honey crystallize?

Is it any good now?

The is a little more than a cup left ..... any recipes to use it all up if it is still ok.

Just heat it.  The sugar has super saturated the water (liquid) in the honey.

It's good - same with brown sugar when it becomes a rock - heat it up.

Just stick the honey jar without the lid in the microwave for a few seconds.

This means that the water in honey contains more sugar than it should naturally hold. The overabundance of sugar makes honey unstable. Thus, it is natural for honey to crystallize since it is an over-saturated sugar solution. If you see any crystals in the honey or on the sides of the container, heat it until all the crystals have melted. A good way to do this is by placing the container in a pot of about 200°F water until it is nice and runny. Make sure to let the honey cool back to room temperature before proceeding.

Your honey is still good.  They have found honey in pots in the pyramids going back 3,000 years and it's still edible.

P.S. honey never goes bad. Doesn't ferment, rot, mold. They've recovered honey that's thousands of years old from the pyramids. Lab tested. It's perfectly safe to eat.
Store covered, at room temperature.
