Yep! Us southern girls grew up on Armour's dried beef in the glass jars, I just had to look in my pantry for the brand name, LOL!
It's always there for a quick lunch for me!

@KingstonsMom YEP! Thanks! That's the "right" one! LOL!!! It was always in our pantry growing up and in college, but somehow got lost at some point. Now I want some! Badly!

One tablespoon butter
One tablespoon flour
One cup milk
Melt butter, slowly add flour low heat, then add milk. I make this X 4 for my needs. I ad salt, pepper for Chipped beef on toast. I use this exact same recipe for cheese sauce over horseshoes, except I add a little shot of hot sauce and worchestire sauce. I am from the home of the original Leland Horseshoe where this was invented and this receipe is very similar to the Original. works wonderful, everytime, on either one of these dishes. I have added beer on occassion to my cheese sauce but I like it better withought.

We used to have creamed chipped beef over toast often when I was growing up. Armour was the brand. I haven't made it in some time but... 2 Tblsp. each of flour and butter mixed in sauce pan, add approximately 1 cup milk (depending on consistency you desire). Add chopped chipped beef and pepper. No salt!! As someone else mentioned, extra seasoning is based on your personal taste if so desired.
ETA, I believe Stouffers used to make a boil in bag version that was pretty darned good.

@Sooner & @KingstonsMom We can get both in the Midwest and I've eaten both. The Armor dried beef is much saltier than the Buddig. Buddig, truth be told, is a cheap tumbled & pressed, thinly sliced lunch meat. When making SOS for a family, several packages are needed. And since it's a budget type meal, maybe that's one reason how Buddig gained popularity, besides being served in military mess halls. Just speculating. My mom made it with the Buddig and everyone we knew did too. I just carried on.

@Luvsmyfam I have watched Chopped on Food Network from Day 1 and the thing that so many of the cooks leave out, even in sweet dishes, is salt!

The topic of chipped beef on toast comes up once in a while, and it always makes me want some. I have not been able to find Buddig beef in my store for years. They might have turkey, corned beef or ham but not beef. I thought they stopped making it. I guess I'm just not there at the right time. So to get my "cream on toast" fix I end up making chicken ala king 😊
