White Chocolate Cherry Shortbread Cookies

These are the prettiest and most delicious Christmas cookies you will ever make.


2 ½ cups flour

½ cup sugar

1 cup cold butter

½ cup chopped cherries

4 oz. finely chopped white chocolate squares or chips

(I use white chocolate chips and chop them in my food processor)

½ teaspoon almond extract

Combine the flour and sugar. Cut in the butter in a food processor or stand mixer or pastry blender, until well blended. Add cherries and chopped white chocolate. Stir in the almond extract.

Shape into ¾ inch balls. Place on cookie sheet, flatten with drinking glass coated in sugar. Bake 10-12 minutes.

Once cooled, combine 8 oz. white chocolate and 2 teaspoons of shortening. Melt together. Dip ½ cookie into the white chocolate. Cool on wax paper.
