Does anybody have a recipe? I have never made this before and am anxious to try it.

Here's mine:
This is our favorite! I got the recipe when we lived there. 
San Antonio Chili
2 lbs. skinless, boneless chicken breasts
3 (16 oz.) cans Great Northern beans, drained and rinsed
1 medium onion, chopped
1 clove garlic, minced
2 (4 oz.) cans whole green chilies, cut in large pieces
2 tsp. ground cumin
1 tsp. ground oregano
1 1/2 tsp. cayenne pepper
1/2 tsp. salt
1 (14 1/2 oz.) chicken broth
1 cup water
Cut chicken in one-inch pieces and brown if desired (I don't brown.). Put all ingredients in Crock Pot and stir to mix. Cook on low for 10 hours, high for 6 hours.

This is a recipe I have used for years and it is always a hit.
I am a vegetarian and use veggie stock. I do cook chicken on the side for my meat-loving friends to add. But, I expect that many would prefer the full chicken stock, cooked chicken version.
Another note, serve lime wedges along side the final version--the squeeze of lime really brightens the dish.

Your recipe is similar to mine except I cheat and use rotisserie chicken.
Hi kath - I used to brown mine, but I don't any longer. It seems to be just fine without it. I've never tried rotisserie; I'll have to do that!

Hey Beach-mom, can you make this in a dutch oven on the stove top instead of putting it in the crockpot and can you use the cannellini beans instead of the great northern beans?

Beachy, rotisserie chicken is a staple in my single household and I'm always looking for creative ways to use leftovers, it also cuts the chili cooking time a lot. 
Mom2eli, I don't see why you couldn't cook the chili in a dutch oven on the stove top and use cannellini beans, just reduce the cooking time and maybe use a little less water - you can always add more water during cooking. Cannellini beans aren't easy to source in my area, so I use whatever canned white beans my store has available.

I'm not Beach-mom, but I use a recipe similar to 2zbeach that I got from my niece years ago. I poach the chicken breasts first (hint: if you have a Kitchenaid mixer, use low speed and paddle to shred it in an instant!) and then do the rest on the stove top just long enough to heat through and melt the cheese.
ETA: If using canned beans, I don't see why you couldn't use cannellini beans.
