White Bean & Grape Tomato Salad…So Good!

 

¼ cup olive oil

3 tablespoons red wine vinegar

½ teaspoon Dijon mustard

¾ teaspoon kosher salt

½ teaspoon pepper

¾ cup very thinly sliced red onion (about ½ a small onion)

1½ teaspoons minced garlic (about 1 large clove)

2 pints cherry tomatoes or grape tomatoes, halved

1 (15-ounce can) cannellini beans, rinsed and drained

⅓ cup chopped fresh Italian (flat leaf) parsley or basil

½ cup shaved Parmesan (about 2 ounces)

Stir in the red onion and garlic and set the dressing aside to marinate for 15 to 30 minutes at room temperature. Place the tomatoes, white beans and parsley in a large bowl. Pour the dressing over the salad, toss well, then gently fold in the Parmesan. Serve at room temperature using a slotted spoon

Thank you for sharing, it looks delicious. 
I'll make it Saturday. I 'll need to leave out yhe raw onions and garlic.

Nice! Right up my alley; I would definitely make this. I use cannellini beans a lot and make similar salads to this all the time, depending what I have on hand. You could really do it with any bean you like. Chickpeas would be good too.

 

I absolutely love this time of year with access to all the farm stands and delicious fresh, local produce.

Radishes would be nice in this also.🥗 Thanks for sharing!

TY @ciao_bella . I think I have all ingredients except beans, but I do have some chickpeas that I will sub. Sounds like a nice summer lunch which is what I have been looking for . I think I will try it today.

My kind of meal!  Nice that all ingredients can be easily found.  I am a pushover for any kind of raw onion dish.  Still love an onion sandwich, just like my mom 💕

@ciao_bella, yes indeed, your recipe is right up my alley too! Thank you.

 

I love marinated beans, and have splurged a few times on Divina Gigante Beans in vinaigrette. TDF!

They only come in a 4 pound can, but are so darn good that I can eat them nearly every day & not be sick of them.

Greek gigantes are like a large butter bean, and are big, plump and satisfying.

@sabatini I've never had that kind of marinated bean in a can.  And here I thought as Italian, I tasted every kind of bean there was!  lol   I'll look for them.  You have me interested.

@ciao_bella, they're amazing and have a cult following. I even sent a can to my vegetarian brother for Christmas.

 

They're pricey, though, and the cost keeps going up.

But I'll still buy them, especially for a special occasion. Smiley Very Happy
