Re: Where did I go WRONG🤮 (Pumpkin Bread Update)

Old baking powder would account for the bread not rising.  Dryness is usually due to the ratio of wet to dry ingredients.  Tasteless is likely related to spice blend.  Dryness, hard as a brick is over baking/oven temperature related.

How about using the old standby recipe from Libby's?  They also have a few amped up versions under their recipe section for quick breads.  I've used their traditional recipe and it's fine.

Well I realized what I did wrong ... I baked it too long and maybe my baking powder was the cause of it not rising.  I used 1 can of Libby pumpkin 15 oz.

I also used a larger loaf pan ... either way I'm a pumpkin bread "failure" Lol

Your recipe was fine it was the bakeršŸ˜‰šŸ¤¦ā€ā™€ļø

(I decided to forgo making it for our gathering -- I'm going to stick to what I know so most likely will make carrot cake bars)

So sorry.  Always remember to sift flour.

I've seen recipes on youtube when the flour wasn't sifted.  Hard to tell what measurement you have!

Out of curiosity, I compared the recipe you used to the pumpkin bread recipe in my Betty Crocker cookbook.

In my cookbook, it is 1-2/3 C. sugar not 2-2/3 C. sugar;  3 C. flour, not 3-1/3 C. flour; and no water.  Plus, 2 t. vanilla, there was no vanilla in the recipe you used.  Also, the recipe is for two 8" loaf pans or ONE 9" loaf pan.
