@dex, good question, I really can't say but I don't see why not, they're added at the end so I would try a taste test.

I have used ham, leftover pork, leftover chicken, and hamburger in my lentil soup.   If you like lentils to begin with, I don't think the meat you use really matters.   I don't make soup by a recipe; I use what we like, or what I have on hand.

I've never made a soup that didn't freeze well.  White potatoes can be iffy and the texture changes a bit, but as someone else stated, very small dice helps.

@Lapdog,

I had never eaten, or even heard of 15 bean soup prior to 1998 when my husband had an MI.   During his Cardiac Rehab classes, we were able to taste a new dish weekly, and receive the recipe.  The 15 bean soup with turkey sausage was very tasty, and my husband was receptive to trying this at home.      

 

My husband and I were still okay with the recipe, but to this day our girls still go on about that soup as THE absolute worst thing I have ever fed them, along with a meatloaf recipe I got from Rachel Ray that called for cinnamon.
