Garlic or red wine.  I never add anything hot.  It ruins the entire pot for those that can't eat hot, and can be added at the table.

 

When I make beef veggie soup, my base is V-8 juice.

For beef soup or stew and any type of ground beef dish such as shepherd's pie, I'd  first  add McCormick's Montreal Steak seasoning to the meat   (contains garlic, pepper and salt) as it browns.  Saute meat with  plenty of chopped celery and onion.

 

Then  add some or all of the following:

 

Beef stock or broth, an envelope of Lipton's BEEFY ONION SOUP  mix,  condensed tomato soup (which adds some sweetness), Worcestershire sauce,  and depending on how thick the dish is supposed to be,  maybe an envelope of brown gravy mix.

 

My husband likes food to be spicy-hot, so I often use red pepper flakes or some  hot sauce, too.

 

Have also included various types of canned tomatoes, some of which are already spiced up with oregano and other herbs.

I recently tried a  soup recipe  that called for adding chopped cabbage and carrots.  It  suggested simply buying a bag of prechopped cole slaw mix. 

 

Turned out great-- and any shortcut to avoid chopping cabbage is OK with me.
