I will be making fried breaded cat fish and a dried salt cod appetizer spread named Brandade by Chef John from All recipes.

I purchased boneless dried salt cod fish and cut it into pieces then rinsed most of the salt off with tap water and placed them into an air tight container after filling the contaner with water submerging the cod underneath the water. Over the nexct 48 hours I drained and refreshed the tap water 4 times to remove most of the saltiness.

I can also boil it to do the quick salt release method, but prefer to not cook it until I prepared it as listed above.

You can always add salt to the recipes but with these  two recipes they are always salted enough.

We eat a lot of seafood.  I have prepared crab stuffed salmon for tonight.  I just have to put it into the oven..corn on the cob and fresh green salad with mint will round it off.

Sauteed tilapia, my potato salad, freshly made, and steamed brussels sprouts.

DH is a little under the weather and these are some of his favorites.

Good evening all.
