I see a monthly cooking thread but I thought I'd toss this one out there. 

 

DH left this morning for a three day layover in...oh I don't even remember now LOL!

 

So I thought I would make something light and I know he would not even try if he were here. 

 

I am am having a roasted golden beet salad over spring greens, toasted pine nuts and a drizzle of white balsamic vinegar. Easy and tasty. 

 

Prepping beets now so all I have to do is assemble later.

I am making Turkey Chili with a new recipe using lots of spices including unsweetened cocoa, frozen corn, fresh carrots, kidney beans, pinto beans and it's gluten free.  I am hungry just thinking about it.  Cat Wink

I love beets.  But when I first saw your picture I thought they were pumpkins or squash lol

I had a bunch of tomatoes on the vinet that I brought in before the storm, so I made homemade spaghetti sauce.  I have a basic recipe, then I just kept adding spices.  It turned out really good.  I put a lot in the freezer for this winter.

I've been canning tomatoes for 3 days and now I'm tomato'd out.

They are rather large beets! About the size of a softball. It will make a lot of leftovers for me. Good thing is this salad is good at any temperature.

Sausages with peppers and onions in a light marinara sauce.  Tossed salad and Italian bread.
