What's for Dinner Tonight? Saturday, Sept. 23

DH still gone at work. Tonight for me it will be a pan seared SMOTHERED chicken breast cutlet with a simple side of steamed rice with salt, pepper, butter and fresh parsley.

 

Very easy but so flavorful.

I'm making David V's eggplant parm lasagna. Not using frozen and not breading the eggplant. Using the last of my tomatoes from the garden in a fresh marinara. Also, Italian sausage with garlic and my kale. The white flies are getting to the kale, but I planted plenty, so I'm still good.

It's been chilly and raining and a good day to make A big pot of New England clam chowder to share (with neighbors).  🙂

Sautéed mushrooms.

Green onions

Crispy crumbled bacon 

Melted cheese

 

And it kind of makes a bit of its own sauce when it cooks so yum.

Cool weather today so I made a simple Pot Roast. Just with onions, carrots and taters.  Steamed broccoli to go with it.  Comfort food.
