What's Your Go-To Meal/Recipe???

Mine is the Parmesan Crusted Chicken recipe on the Hellman's mayo jar. It'seems so easy to get into a cooking Rut.  When I tried this recipe, I knew it was something we' have every couple of weeks.  I make it with boneless chicken thighs instead of the breasts.  Much more juicy and flavorful.

My go to meal?  I go to the freezer and try to find spagetti sauce, homemade vegetable soup, or chili.

A chicken taco salad or chicken enchiladas or a layered pizza casserole.

Ive never tried the parmasan crusted chicken, sounds good. I know what you mean about getting into a cooking rut !

PARMESAN CRUSTED CHICKEN

 

  • SERVES: 4
  • PREP TIME: 10 min
  • COOK TIME: 20 minINGREDIENTS
DIRECTIONS
  1. Preheat oven to 425°.
  2. Combine Hellmann's® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
  3. Bake until chicken is thoroughly cooked, about 20 minutes

I grew up on this dish, when I was first married we had this quite often, and now we have this just because it is easy, tastes good, and fills you up:

 

2 Cups Elbow Macaroni (cooked according to package instructions and drained)

1-2 Pounds Hamburger (I only use 1 pound but if hubby makes it he likes more meat so he uses 2) cooked until no longer pink in the middle and drained

2 Cans Stewed Tomatoes, Drained

2 Cans Tomato Soup

 

Place all ingredients in large pan and heat.

My go to meal usually involves chicken, most often a stir fry with whatever veg is in the refrigerator..

The concept of "go to" is strange to me.  My approach to meal planning is to first compile a seven day menu, then to grocery shop accordingly. Therefore, I always know "what's for dinner."

 

 

This is a Recipes forum, so here is the recipe I used for last night's dinner: 

 

Zuppa Toscana 
QVC Recipe Swap | On 5/18/2011 by lavendersage

 

1 pound Italian sausage
3/4 teaspoon crushed red pepper flakes, optional
6 slices bacon, torn or cut into smaller pieces
1 large onion, diced
1 clove of garlic, minced
2 - 2 ½ quarts (8 - 10 cups) chicken broth
6 cups of potatoes, thinly sliced with skin on..russet or Yukon gold are good (about 3 russets)
1 cup half ‘n half
2- 3 cups of kale, in bite size pieces
top with grated Parmesan cheese

 

Remove the Italian sausage from casings and brown with red pepper flakes in a large pot. Drain and set aside.

 

Cook the bacon in the same pot until crisp. Drain, reserve about 2 tablespoons of drippings with the bacon in the pot. Stir in the onions and garlic; cook until onions are soft, about 5 minutes.

 

Pour the chicken broth into the pot with the bacon and onion; bring to a boil.

 

Add the potatoes, and cook until tender, about 20 minutes on medium heat. Reduce the heat to low and stir in the half n half and the cooked sausage; heat through; don't boil.

 

Add the kale and let cook until desired tenderness...5-10 minutes.

 

Grate Parmesan cheese on top of servings.

My go to meal is shrimp.  I keep a bag of frozen cooked shrimp, frozen uncooked shrimp, and a large box of breaded shrimp in the freezer all the time.  Shrimp cooks fast (stir fry, scampi) or is great on a salad.  Go to for me means I haven't planned anything and my husband will be home for dinner.  He travels a lot and therefore has to eat out.  When he is in town, he prefers a home cooked meal.
