Re: What's Your Favorite Pumpkin Recipe?

I love pumpkin anything.

If you haven't tried it, add some pumpkin next time you make a chili.

It's really good.  Last night I made a pumpkin/ground turkey chili.

And for dessert.....these and a cup of pumpkin spice tea.  Yum!

Pumpkin Crescent Rolls

1 (8 ounce) package cream cheese, softened
1 (15 ounce) can pumpkin
1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk)
2 tablespoons flour
2 tablespoons cinnamon
1 teaspoon pumpkin pie spice
1 cup pecans, finely chopped
4 (8 ounce) packages refrigerated crescent rolls
1/2 cup granulated sugar
^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^
Preheat oven to 375*
In a mixer bowl, blend cream cheese, pumpkin, flour and spices until combined and smooth.
Unroll crescent rolls, separate and lay flat. Evenly spread 1 1/2 tablespoons of pumpkin mixture over each roll of the uncooked dough. Sprinkle 1 teaspoon chopped nuts over the pumpkin layer then roll into the crescent shape. Sprinkle the top of the rolls with a little granulated sugar.
Bake 11 to 13 minutes or until slightly golden brown.

Re: What's Your Favorite Pumpkin Recipe?

Many recipes can be found but this is the basic recipe I use,  I just have to spice it up.  I usually add black beans.

Whichever way I make chili, I always add pumpkin.

1 tablespoon vegetable oil

  • 1 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1 clove garlic, minced
  • 1 pound ground turkey
  • 1 (14.5 ounce) can diced tomatoees

  • 2 cups pumpkin puree
  • 1 1/2 tablespoons chili powder
  • 1/2 teaspoon ground black pepper
  • 1 dash salt
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup sour cream

Directions

  1. Heat the oil in a large skillet over medium heat, and saute the onion, green bell pepper, yellow bell pepper, and garlic until tender. Stir in the turkey, and cook until evenly brown. Drain, and mix in tomatoes and pumpkin. Season with chili powder, pepper, and salt. Reduce heat to low, cover, and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.
