Pumpkin Bars.  I have shared this before.  These are so good and when shared, they go over really big.

 


Pumpkin Bars By JPC

2 cups sugar
4 eggs
2 tsp baking powder
1 tsp Baking Soda
1/2 tsp salt
1& 1/2 tsp cinnamon
1 cup mazola oil
2 cups flour
1 can (15 oz) pure pumpkin

Mix and bake  in a jelly roll pan (apx 10 X 15") at 350 degrees.  Mine bake apx 40 minutes but start checking around 30 minutes.  (till toothpick in center comes out clean). I spray the pan with Pam.

Frosting

3 oz cream cheese - softened
1 tsp vanilla
3/4 stick margarine or butter-softened
1 tsp milk
1 & 3/4 cups powdered sugar

(I use 8 oz of cream cheese, 1 & 1/2 sticks of margarine or butter
and 3 & 1/2 - 4 cups powdered sugar to double the frosting- yummy)

Cream margarine or butter and cream cheese then add rest of ingredients and mix.
Spread on cooled pumpkin bars.

Pumpkin, raisin, nut bread.  I make it in mini loaf pans, wrap individually, and freeze.  I can eat it right out of the freezer as it slices well, or let come to room temp, never can wait for this.

I LOVE these pumpkin pie bars!  They are very similar to the Pumpkin Roll - except I think they are a bit easier and also moister.  Also, instead of using aluminum foil and spraying it with non-stick spray, I just use non-stick aluminum foil.  This receipe is on the Kraft Foods website, but I have copied it here also.

 

Pumpkin Pie Bars

Crunchy oat-nut crust, cream cheese in the filling and sweet crumbs combine to take pumpkin pie to a new and even more delicious level.
  
  • 1-1/3 cups flour
     
  •  3/4 cup granulated sugar, divided
     
  •  1/2 cup packed brown sugar
     
  •  3/4 cup cold butter or margarine, cut up
     
  •  1 cup old-fashioned or quick-cooking oats, uncooked
     
  •  1/2 cup chopped PLANTERS Pecans
     
  •  1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
     
  •  3 eggs
     
  •  1 can (15 oz.) pumpkin
     
  •  1 Tbsp. pumpkin pie spice
     

 

  • Heat oven to 350°F.
  • Line 13x9-inch pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides; spray with cooking spray. Mix flour, 1/4 cup granulated sugar and brown sugar in medium bowl until blended; cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in oats and nuts.
  • Reserve 1 cup oat mixture; press remaining onto bottom of prepared pan. Bake 15 min. Beat cream cheese, remaining sugar, eggs, pumpkin and spice with mixer until blended; pour over crust. Sprinkle with reserved oat mixture.
  • Bake 25 min.; cool 10 min. Use foil to transfer dessert from pan to wire rack; cool completely.

Pumpkin Bread

 

2/3 c safflower oil
2 2/3 c sugar
4 eggs
1 can pumpkin (1 lb)
2/3 c water
3 1/3 c all purpose flour
2 tsp soda
1 1/2 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cloves
1 c chopped walnuts
 
Heat Oven to 350° Bake 70 mins or until toothpick comes out clean
Grease 2 -  9 x 5 x 3 loaf pans
In large bowl mix oil & sugar, stir in eggs, pumpkin & water
Blend in flour, soda, salt, baking powder, cinnamon & cloves
Stir in nuts

Made the Pumpkin Sausage soup this morning.  It is delicious!  Having it for dinner tonight and then I will do the freezing test.  I did put a couple of pinches of red pepper flakes in while it was simmering.  I am always looking for new soup recipes so thanks!
