It's one cookie, a drop sugar cookie, which I simply roll in holiday-themed colored sugar: green and red, or blue, for Christmas, red and pink for Valentine's Day, green for St Patty's Day, orange for Halloween, etc. Easter is fun: red, green, pink, orange, blue, purple, yellow. Craft stores have an abundance of colors

Peanut butter blossoms are always nice. However for Christmas, I like basic chocolate chip cookies but switch out the chips with red & green M&M's.

Back in the day when I did cook I liked to make pizzelles. Then my son took over and he likes to make them.

I used to make cookies but this year I decided to buy them. Ordered over the weekend a box of six pounds of David's Cookies and Brownies from Costco that is on sale for $59.99 plus free shipping. Looks like a good variety. 

 

In the past I have made frosted sugar cookies and the ones rolled in powdered sugar. One year I made Buckeye PB candy.

Coconut - Chocolate Macaroons:

Coconut-Chocolate Macaroons

Ingredients:

Ingredient Checklist
  • 1 large egg white
  • 2 tablespoons honey
  • 1/4 teaspoon pure vanilla extract
  • Grated zest of 1 lemon
  • 1/8 teaspoon coarse salt
  • 1 1/2 cups finely shredded unsweetened coconut
  • 2 ounces dark chocolate (at least 70 percent cacao), melted
Directions:

  • Step 1

    Preheat oven to 375 degrees F. In a bowl, whisk together egg white, honey, vanilla, lemon zest, and salt. Stir in coconut until completely coated with egg mixture. With a 1 1/2-inch ice-cream scoop, make 15 balls, transferring each one to a parchment-lined baking sheet, spacing about 2 inches apart.

  • Step 2

    Bake, rotating halfway through, until the coconut starts to turn golden brown on the edges, about 12 minutes. Transfer sheet to a wire rack, and let cool completely. (Cookies can be stored in an airtight container up to 3 days.) Before serving, drizzle with melted chocolate, or dip one side in melted chocolate. Refrigerate 15 minutes to set.

I don't bake many holiday cookies anymore because I eat too many!  And, the grandkids just want chocolate-chip cookies...ha!  But, here are a couple favorites....

 

Pecan Balls

 

1 cup butter, softened

6 Tablespoons powdered sugar

2 cups flour

2 cups finely chopped pecans.

 

Mix ingredients together.  Form small balls and place on cookie sheet.  Bake at 250 for 50 minutes.  Let cool and roll in additional powdered sugar.

 

Pecan Pie Bars

 

1 cup butter, melted

2 cups flour

1 cup Light Brown Sugar

 

Mix the above and put into a greased 9x13" pan.  Bake at 350 for 15 minutes.  Let cool.

 

Mix together.... 4 eggs, lightly beaten

                         1/4 cup flour

                         3 cups Dark Brown Sugar

                         1 cup coconut

                         2 cups chopped pecans

                         1 teaspoon salt

 

Spread over cooled crust and bake at 350 for 40-45 minutes.  If desired, sprinkle with powdered sugar. Cut into bars.
