Do you have a go-to cream filling recipe for cupcakes and cakes? I'm hosting a game night tomorrow and thought I'd make chocolate cupcakes with cream filling.
There are so many cream filling recipes out there, it's hard to decide. If you have a favorite to share, I'd be delighted to know.

I have used this in the past, it comes from Betty Crocker,
1 jar (7 oz) kraft Marshmallow Fluff
3/4 cup softened butter
1 t vanilla
1 1/2 c powdered sugar
Whip it all together till fluffly and combined.

I like a cheesecake-like filling:
1 lb room-temperature cream cheese
1/2 cup sugar
1/4 tsp salt
2 room-temperature egg whites
2 tbsp room-temperature sour cream
Beat cream cheese, sugar, and salt with electric mixer until smooth. Beat in egg whites and sour cream. Place a tablespoon of filling on top of batter in tin before baking. Bake until tops of cupcakes just begin to crack, about 25 minutes.

@house_cat A really easy one is instant pudding mix using heavy whipping cream instead of milk. French vanilla makes the most delicious creamy filling.

All the recipes sound delicious and I'll save them for the future, but yours sounds the easiest. I wasn't sure about the ratio whipping cream to pudding mix, but I found this.

DH requested a Yule Log-type cake. I've never attempted a rolled cake before. I guess I made the cake layer too thick, because there was no way I was going to be able to roll it up. I quickly switched to Plan B and made layers out of it. I used the easy recipe above with the pudding and cream. I topped it with a dark chocolate ganache. It wouldn't win any awards for presentation, but it was delicious.
Thanks everyone... next time I'm trying one of the other recipes on this thread.
