Broccoli.  If it is healthy--gag.  Otherwise you have to spiff it up then it is edible but not healthy any more.  There is a broccoli salad that has bacon and mayo in it, so of course it is wonderful.

 

  1. If I need to eat it, and I eat it exclusively on a need-only basis, I like it steamed and I'll eat it with the innards of a well-baked fluffy baked potato.  All chopped together.

This is a new favorite that I made today from the NY Times.  It was very flavorful.:

 

ROASTED BROCCOLI WITH VINEGAR MUSTARD GLAZE

 

  • 1 ½ pounds broccoli, cut into 1 1/2- to 2-inch-long florets, stems sliced 1/4-inch thick
  • 3 tablespoons extra-virgin olive oil
  •  Kosher salt and black pepper
  • 1 tablespoon unsalted butter
  • 1 tablespoon sherry or red wine vinegar
  • 1 teaspoon Dijon mustard
 
  1. Heat the oven to 450 degrees. On a baking sheet, toss the broccoli with the olive oil, salt and pepper. Arrange in a single layer, cut-sides down, and roast, without flipping, until browned and crisp-tender, 15 to 20 minutes.
  2. Add the butter, vinegar and mustard to the broccoli on the sheet pan and toss until the butter’s melted, scraping up browned bits from the pan as you go. Season to taste with salt and pepper.

@ECBG  The question isn't about the nutrients and flavor.  It's that it's a spinach's recipe and the OP asked about broccoli.

broccoli soup is pretty awsome.i always add cr. Cheese and a smidgen of nutmeg to this creamed soup plus cheese.very yummy with crusty bread

One of my favorites because I love salads....the Lemon Vinaigrette makes it!

 

Lemon Basil Pasta Salad

 

9 oz. rotini pasta

3 large carrots, sliced*

1 cup broccoli florets

1 cup cauliflower florets

1/2 cup green pepper, chopped

1/2 cup red onion, sliced or chopped

1 cup Lemon Basil Vinaigrette (below)

 

* can substitute shredded carrots 

 

Cook pasta, drain and rinse in cold water.  Mix together with cut vegetables.  Add dressing, mix lightly and refrigerate until serving.

 

Lemon Basil Vinaigrette

 

1 cup salad oil

2 tablespoons water

1/2 cup white vinegar

1 lemon....juice and zest

1/3 cup sugar

1 teaspoon salt

1/2 cup fresh basil, torn or chopped*

2 tablespoons chopped onion**

Mix all together well.

 

* can substitute 1-2 tablespoons dill

** optional to me...since there is onion in salad I don't add

I like to stuff a baked potato with steamed broccoli florets, sprinkle with shredded extra sharp cheddar, then crumble a hard-cooked egg overall.  It's a filling meal.

P.S.  As discussed in a thread with DiAnne, I would not rinse the pasta, but dress it while it is still hot.
