Made a Spicy Baked Peanut Butter Chicken dish for dinner.  Used 1 pound of cubed chicken (4 boneless, skinless thighs).  

 

3 of the thighs were juicy and tender and one (wish I knew which one) was as tough as leather!

 

So much for buying 'better' meat!  It was premium!

i don’t know.  I buy very good premium meat from a local butcher shop, mainly ribeyes or porterhouse.  I just think they grow different or something.  I swear the meats taste different than when we were younger.  Sometimes tough as .he77!!!  I don’t find that often with pork, but I do think today’s pork does seem much leaner.
