What do I do with all this pickled cauliflower?

I aplogize, this is not really a recipe question but I could use some input from my food forum friends.

 

My DIL brought me a huge jar of pickled cauliflower.  DH doesn't like anything pickled and I'm only one person.  The only thing I've ever done with pickles is eat them on a burger or sandwich. I'm wondering what I'm going to do with all this cauliflower!

@house_cat   I have never tasted pickled cauliflower, but maybe on crackers, on a salad, or on a burger.  Honestly, I have no idea how it tastes, so I'm thinking salad, since I like pickled beets on mine.

I enjoy it, but it's usually mixed with other vegetables like peppers, carrots, celery and onions. It's called giardiniera.

 

You could mix it with olives and pickles and eat it like that. I've never seen it by itself.

Pickled cauliflower is great to chop and add to macaroni salad and pasta salad.  I have eaten it in shredded cole slaw made with green peppers, carrots and a vinaigrette dressing.  I have eaten it chopped fine on a hot dog.

@house_cat   I like pickled cauliflower.  As another poster mentioned, it's usually mixed with other pickled vegetables.    I often buy it where it's mixed with sweet pickles and tiny whole onions.  

 

Anyway, to answer your question .... a lot of people just eat it with a sandwich as you would pickles (either on the sandwich or on the side).  Or you can chop it up and use it as you would a sweet pickle relish.  

 

And I wouldn't be concerned with having to use it up quickly.  Pickled items last a very long time.

Since it has a long shelf life, maybe incorporate it into a basket of goodies for a Christmas present for someone who loves anything food or kitchen.
