You could add it to your pasta or potato salad and leave it out of your DH's.

@house_cat, is your DIL gifting it to you that's perhaps an elephant in the room?
Hope I'm not being presumptuous.
I'm asking because I try to be careful with my own DIL.
Awhile back, I decided to just be honest, but gentle!
@house_cat, you have a perfectly good reason to say exactly what you said to us here - that 'your DH doesn't eat it, and that you're only one person'.
Easy, right? But oh, so hard to do? Will it cause hurt feelings, create resentment, etc.?
So, the next time, give her a great big, sunny smile and say "I'll split it with you, honey!", then add the part about having a small household.
If you're the touchy-feely type, put your arm around her & give a motherly squeeze when you say it.

p.s. Take out a decent portion of the cauliflower to eat, and either re-gift, or toss the rest.

She pickled it herself because she had a huge harvest of it recently. The last thing she'd want is for me to share it with her, lol.
Thanks to all the suggestions here, I know how I'll use it. My family comes for dinner every Sunday and I almost always have olives, cheese, crackers, dry sausage and the like for appetizers. I'll just add some pickled cauliflower to the platter!

I found a recipe online a few years ago for Instant Pot Italian Beef (crockpot would also work). After you sear the beef, add it to the Instant Pot, then I add a jar of pickled cauliflower, a jar of giardiniera, and a packet of Good Seasonings Italian. It is really good.

Hmm. I hadn't thought of it that way. My mom used to brown pork chops and then add in a jar of roasted red peppers with the liquid to finish the cooking. It created a delicious sauce. I'm thinking this would be quite similar. I'll have to look into this. Thank you.

The point of pickling is to preserve it. They probably brought some over on the Mayflower. Just keep it in your frig and it will last a couple years. Offer it to any and all guests.
