@depglass We keep a bunch out on the kitchen table at all times. When the grandchildren want sweets, we suggest they try a cute little tomato. They LOVE them! Here's another recipe that is so easy:
Chicken, Tomato and Basil Pasta
Ingredients:
1 lb. boneless chicken breast - rinsed and patted dry
1 pint grape or cherry tomatoes - cut into quarters
1 bunch fresh basil - rinsed and dried
1 can chicken broth or 1/4 cup white wine
2 or 3 Tblsp. extra virgin olive oil
1 lb. spaghetti or linguini
kosher salt and pepper to taste
Directions:
Slice the chicken into oversized strips and sprinkle with kosher salt and pepper. Heat olive oil in a large saute pan over medium-high heat until the oil begins to dance. Sear the chicken quickly on both sides so that a little brown crust forms on the chicken. Remove the chicken and set aside. In the same pan add the diced tomatoes and cook them, stirring occasionally, until they begin to break down and dry out. They will start sticking to the bottom of the pan. This will take about 5 minutes. Now add the chicken broth (or wine) and scrape up the dried bits on the bottom of the pan. Allow the broth and tomato mixture to bubble away on medium heat for about 10 minutes until the mixture is reduced by about half. Meanwhile, put the pasta into boiling salted water to cook to "al dente" according to package directions. Also, slice the basil leaves into a chiffonade. Add half of the basil about half way through the tomato cooking time. At the end of the tomato cooking time, add the chicken back to the sauce and return to a simmer for about 5 minutes. When the pasta is ready add it along with the remaining basil to the tomato-chicken sauce and stir to combine. For extra richness finish the sauce with a pat of butter, but this is not necessary. Check for seasoning and serve immediately.

Roast them and toss with pasta and top with parmesan cheese. So easy and delish!

Thanks for posting! That Tomato Pie sounds really good!
I am thinking I could use those ingredients and do it on a pizza/flat bread crust as well!

freeze them whole for use in sauces.
i also like to cook them down in a little bit of butter or oil and add some salt and pepper (sometimes i add a pinch of saffron). i reduce them as much as i can and voila......homemade tomato paste that i freeze in small containers.

@RespectLife, I think making the Tomato Pie on flatbread is a great idea. I make the pie every summer with local tomatoes, and it's always good. I'm going to try it with the flatbread next time - thanks for the idea.

I cut them in half and toss with Italian dressing for a tasty dinner dish !!!!

Make a fresh summer tomato sauce:
I cut the tomatoes in half and saute them in a saucepan with a little olive oil, garlic, basil, salt and pepper. Toss with hot pasta. Delish!

I would puree them and freeze them. would be great in soups, red sauces, chilis too.
