What Was The Pot Roast Recipe You Grew Up With?

I loved one pot roast we had.  My step sister, 12 years younger than I, would eat it cold for breakfast she loved it SO much!

 

1 large chuck roast, fat cut away

1 small bunch fresh carrots

5 russet potatoes

2 sweet onions

2 Tbsp. Worcheschire Sauce

2 cans Campbell's Tomato Soup

1 1/2 soup cans of water

 

In a large roaster, place chuck roast

Peel and cut carrots into thick sticks and peel potatoes, cutting through to create 1/4 inch rounds.

 

Add vegetables around roast.

Cut peeled onions into fourths and place in corners and sides.

Sprinkle Worchestchire sauce over all.

Spoon contents of 2 cans of tomato soup over all.

Pour 1 1/2 cans of watter over all.

Bake at 350 degrees COVERED TIGHTLY for 3 hours (longer if liquid hasn't cooked down).

(May have to add a little moisture to reheat.).

Never has pot roast, we had an oven cooked rib roast every Friday night

@ECBG   I don't know what my mom did but today when I make pot roast I use onions, carrots (If I'm lazy I will buy a package of baby carrots & cut them in half), potatoes, celery & chuck roast. 

 

For for seasoning I will use a container of cream of mushroom soup & Costco sells a frozen French onion soup that I'll add to the pot...then salt, pepper, sage, garlic and whatever else I have on hand at the moment.  I also add some water for extra moisture.

 

I start at a low heat then slowly increase it for browning at the end.  I like it to be very tender so I'll roast it for 5 hours....it comes out so good!

@haddon9 Here's what I do with mushroom soup.  This recipie is from the 1930's and a family obsession!!!

 

I did the "bundles" when I didn't have extra time to cook on Sundays.  

My students did them in Foods class as part of a Ground Beef lab and loved it!!!

 

Mushroom Meatloaf or Burger Bundles

350 degrees

 

2 lbs ground round (or I lb ground round and one lb ground pork, not sausage, ground.).

2 pieces of well toasted bread, crumbled

2 stalks celery, chopped

1 med onion, chopped

1 egg

Milk to moisten

2 cans Campbell’s mushroom soup with 1 ½ can water, mixed

Mix all EXCEPT SOUP AND WATER.

Form into a loaf in a 9 x 13 casserole.

Bake for 45 min to 1 hr, and spoon off all fat. 

Add mushroom soup and water.

Bake for an additional 1 –1 ½ hr, basting frequently until gravy thickens.

 

For Bundles, Patty out the size of hamburgers.

                      Lightly brown in frying pan, spoon off grease.

                      Add soup and water.

                      Lightly simmer and baste until gravy thickens.

That recipe looks a lot like my mother's except she did not use the soup. She used tomato sauce and sometimes she added crushed tomatoes, since it cooked for hours in the slow cooker. I don't eat meat anymore but, YUM! That was a good memory😊.

4 lb chuck roast

2 tbsp olive oil

large onion sliced into thick rings

3 cloves smashed garlic

8 oz tomato sauce

3 cups beef broth

2 tbsp Worcestershire sauce

1/2 tsp allspice

1/4 tsp thyme

1/2 tsp kosher salt

1/2 tsp pepper

bay leaf

1 lb peeled carrots cut into 3" pieces

 

Gravy:

6 tbsp butter

1/2 cup flour

3-4 cups cooking liquid from roast

 

Season roast with kosher salt and pepper.  Heat oil in big skillet over medium-high heat.  Brown roast in oil for 2 minutes per side.

Place onions in bottom of large slow cooker, then place garlic on top.  Sit roast on top.

 

In same skillet, pour in tomato sauce and scrape up fond over medium heat.  Stir in broth, Worcestershire, allspice, thyme, salt, and pepper. Toss in bay leaf.  Pour over roast in slow cooker. Place carrots around roast.  Cover and cook on low until tender, 8-9 hours.

Place meat and vegetables on platter and tent with foil.  Remove bay leaf, skim fat from cooking liquid, and pour into bowl.

 

Melt butter in saucepan until sizzling.  Stir in flour and cook for 1/2 minute.  Constantly whisk in defatted liquid until thickened.  Bring to a simmer and cook for 2 minutes.

I can remember my mother's pot roast.  She made a brown gravy from the drippings and placed the pot roast over pennsylvania dutch egg noodles with carrots and onions.  We all loved it!

Roast beef floured and seared on all sides, add water, bake in covered roasting pan. We either had mashed potatoes and gravy or mashed potatoes and noodles (cooked in beef broth).  Our vege was usually green beans or corn.

 

If we added carrots, onion, and potato  in the beef roast broth....it was called beef stew.

 

I mostly brown and pressure cook my beef roasts.  Makes great broth for noodles.
