@lucky-girl  Make a marinara like the "Fresh Tomato Marinara Sauce" in All Recipes. Then you can cool and freeze. Also, I just chunk up the tomatoes and place in freezer bags and freeze for soups and stews later on this winter. One hint. If you add basil to the fresh, uncooked tomatoes, the flavor of the basil doesn't survive. I don't know why.

When I was able to eat tomatoes, I loved a tomato sandwich. Just bread, mayo, tomatoes, salt and pepper. You can also roast the tomatoes for the sandwich.

Lucky you!  Look up cucumber, tomato and red onion salad. My family inhales it...enjoy

We have tomatoes this year. The reason being when my husband went to the dump someone left tomatoes plants and he took them home and planted them. They came late but they are good. I am loving my tomato sandwiches.

I made a simple marinara with ours, divided it up into portions I'll use and stuck it in the freezer.
