Thanks for the visual.... the rinds are the filler!  You won't believe how I was trying to imagine how one held pickled watermelon rind(s) in his/her hand and ate it like you would a sandwich.😕😯😆😆   They look quite tasty but I think they would be a  condiment on my sandwich along with some sliced tomatoes and some ham perhaps.
