Watermelon Cookies

1 pkg. (16 oz.) watermelon (or any other flavor) unsweetened Kool-Aid
powder
1 1/2 cups sugar
1 1/4 cups softened butter
2 eggs, beaten
1/2 tsp. salt
1 tsp. baking soda
3 cups flour
1/2 cup sugar (for rolling)

Mix the Kool-Aid and sugar; add the softened butter, and beat until fluffy.

Add the eggs and mix well; mix in salt and baking soda.

Add the flour in increments.

Grease cookie sheets, or cover in parchment.

Form dough into 1" balls, roll in 1/2 of sugar, and place on cookie sheet.

Bake at 325 for 10-12 minutes, until they start to turn golden around the edges. (Do not overbake.)

Cool on cookie sheet for no more than a minute, then move to wire rack to cool completely.

Makes about 6 dozen cookies.

NOTE: You can also roll out the dough and cut into desired shapes with a cookie cutter, then decorate.
