This is not a "fruitcake" but is a fruity cake!  The flavor of the Graham crackers and fruit is amazing!

 

 (AUTUMN CAKE)  Out of this World Cake 

 

2 cups brown sugar                                        

2 sticks margarine                                                     

5 eggs (add 1 at a time)                                

1 lb. crushed Graham crackers                     

1 tsp baking powder                                      

¼ tsp salt                                                        

¾ cup milk                                                                  

2 tsp vanilla                                                    

1 (No.2) can drained crushed pineapple*       

1 cup coconut                                                 

1 ½ cup nuts                                                   

1 jar halved maraschino cherries                  

1 C raisins                                                      

300 degrees 1 hr 20 mins

 

Combine first 3 ingredients. Cream margarine and sugar; add vanilla. Add 1 egg at a time. Add the crumb mixture to the creamed ingredients, alternating with milk. Blend in nuts, coconuts, cherries and pineapple & raisins.

 

Bake in greased and floured tube pan for 1 hour and 15 minutes at 325 degrees.

*A No.2 can is equivalent to 21/2 cups or 20 ounces.

 

Warning: Don’t overload the pan!

@KaySD generously shared the fruitcake recipe handed down to her by her grandmother and mother.  Sounds really good and I had been scouting out so many on the web, but, like you I prefer the "tried and true" from fellow posters here.

 

It is the one I am going to use this year and I already ordered and received the fruit and nuts needed from the nuts.com website.

My mother's recipe is a non-candied fruit version of ciaobella's recipe baked in loaves:

 

1 cup golden raisins

1 cup dried cranberries

1 peeled tart apple, shredded and squeezed dry

6 tbsps brandy

1/3 cup chopped crystallized ginger

1 tsp grated orange zest

28-oz jar mincemeat 

14-oz can sweetened condensed milk

6 tbsp oil

2 lightly-beaten eggs

2 3/4 cups flour

1 tsp baking soda

1/2 tsp salt

1 tbsp powdered sugar

 

Mix raisins, cranberries, apple, brandy, ginger, and orange zest in big bowl.  Let sit for 15 minutes.  Stir in mincemeat, milk, oil, and eggs.  

 

Whisk flour, baking soda, and salt in separate bowl.  Stir into fruit mixture.

 

Pour batter into 2 greased and floured loaf pans.  Bake at 300 degrees until toothpick comes out clean, 1 1/4 - 1 1/2 hours.  Cool in pans on wire rack for 15 minutes.  Turn out of pans on rack to completely cool.

 

Brush tops and sides of cakes with brandy.  Wrap tightly in foil and let sit on counter for 2 days.  Dust with powdered sugar before serving.

This thread really took me by surprise .....  since fruitcakes are practically the top discarded holiday gift,  why waste money on something that ends up in someone's garbage?   JMO

@Tinkrbl44 , I must say that YOUR post took me by surprise.  It was certainly less than pleasant.  lol  Anyway, I am making the fruitcake for me, so I can assure you that it won't be wasted nor go into the garbage.  As an experienced baker and cook, whatever recipe I choose will end up being quite delicious, I'm sure.

@Tinkrbl44   There are many of us fruit cake fanciers around.  This thread obviously appealed to many of us.  I personally love the stuff.  Nothing better for breakfast with a cup of something hot.

2 of my aunts made fruit cake from scratch up till the day they both died.

 

Those cakes were so soaked in rum, you would get drunk just from being in the same room as the cake. Smiley LOL

My aunts fruit cakes were alway very moist.  Even after being shipped from Va. to Pa.

 

I took a slice to work one day & lit up the office.  Never again.  I had surpassed my boss at the time "rum balls." Smiley LOL

 

I believe any rum will do.  It's how much rum you use.
