When I was a little girl had a relative that made the red velvet cake only she called it and her recipe also called it Waldorf Astoria cake. I think the recipe was cut from the newspaper. Has anyone ever heard of this? The frosting was not as tasty as the one made w/cream cheese. I think her recipe used Crisco.

If you use Google - there are lots of recipes and info re: this cake.

It is the red velvet cake my family has always made.

 

Many years later, I use the box red velvet cake (which seems just as good to me) and I double that frosting recipe. That frosting is fabulous and I love it dripping down the sides (you do not frost the sides of the cake in order to have the red show) from the layers.

Forrestwolf posted the recipe on the forums a while back. I prefer the cream cheese frosting.

 

Red Velvet Cake

 

1/2 cup of shortening (such as Crisco)

1 1/2 cups sugar

2 eggs

2 oz. red food coloring

1 teaspoon cocoa

1 cup buttermilk

2 1/2 cups sifted cake flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon vinegar

 

Mix vinegar and soda, set aside. Cream sugar and shortening, then add eggs. Mix cocoa and coloring and add to creamed mixture. Add dry ingredients, alternating with buttermilk. Add vinegar/soda. Pour into 2 greased and floured 9 inch round cake pans, and bake at 350° for 30 minutes. Cool completely, and cut layers in half across. Just make sure they are completely cold.

 

FROSTING

 

1 cup milk

3 tablespoons flour

1 teaspoon vanilla

1 cup sugar

1 cup of butter

 

Cook milk and flour until thick. Cool. Cream sugar and butter. Add cooled mixture to creamed mixture. Beat until fluffy. Place 1 layer of cake on plate, spread frosting on layer and continue until all layers have filling. Do not frost sides of cake. Refrigerate.

My mom knew how much I loved the frosting, so she would always double the frosting recipe. It is best served after coming to room temperature somewhat, but must be stored in the refrigerator.

This is the original Red Velvet cake from the Waldorf Astoria, that made it famous.  Posted by forrestwolf

RED VELVET CAKE
I DON'T KNOW HOW AUTHENTIC THIS IS BUT MY MOM  GOT THIS FROM A NEIGHBOR BACK IN 1963 AND SHE CLAIMS IT COMES FROM A VERY FAMOUS NEW YORK RESTAURANT( Waldorf Astoria). I DO KNOW IT IS VERY GOOD AND IS OUR FAVORITE VERSION OF IT AND HAVE BEEN MAKING IT SINCE SHE GAVE IT TO ME.


VELVETY RED CAKE:
3=1/2 oz bottles red food coloring
3 tbsp. cocoa(Hershey's baking cocoa)
1/2 cup shortening(Crisco)
1 1/2 cup sugar
2 eggs
2 1/4 cup flour
1 tsp salt
1 tsp baking soda
1 cup buttermilk
1 tsp vanilla
1 tsp RICE vinegar(unseasoned one)

 

Mix food coloring and cocoa and let stand. Cream shortening and sugar, add eggs than coloring mixture, beat well. Sift together flour, salt and soda, add to creamed mixture alternately with buttermilk. Mix in Rice vinegar and vanilla but DO NOT BEAT.

 

Bake at 350 for about 35 minutes-2 =8" round pans

 

ICING:
In shaker mix 3 tbsp flour and 1 cup milk, cook over med heat till thickened, cool. Cream 1/2 cup butter and 1 1/4 cup powdered sugar and 1/2 tsp vanilla till fluffy. Add cooled mixture and whip till looks like whipped cream.
