This recipe was in the recent issue of Sunset magazine. If you like really sweet things this is not for you. Would be wonderful with an Easter brunch, etc.

1 cup butter softened
1-1/4 cup sugar
3 large eggs
2 oranges (about 1 pound) ends trimmed and cut into chunks and seeded
2-1/2 cups flour
1/4 t salt and baking soda
1/2 t baking powder
1-1/2 cups powdered sugar
2 T plus 1 t orange juice

Pre heat oven to 325. Coat a bundt pan with cooking spray.

In a large bowl beat butter and sugar until fluffy. Beat in eggs.

Place orange chunks in food processor until mostly smooth but no pureed. Add 1-1/2 cups of orange mixture to batter. Mix until blended.

Add flour, salt, baking soda and baking powder. Beat until smooth. Spread batter in prepared pan.

Bake approximately 55 minutes until toothpick comes out with only a few crumbs. Cool pan on a rack for 10 minutes. Invert cake onto rack and let cool completely.

Whisk together powdered sugar and orange juice in a small bowl. Drizzle over cooled cake. Let glaze set.

12 servings.

This makes a very dense cake. I purchased an extra orange to have juice for the glaze.
