I was watching a Christmas movie (of course)
and the missing ingredient that was lost that his mom used to make cookies, was a tablespoon of vinegar.
So, I read about it and it does seem to be a magic ingredient for all things like cookies, pizza crust, cakes.
There were lots of scientific explanations online that were very interesting. But probably the best explanation is how they taste! I was thinking of
some of the wonderful bakers here and wondering if you ever used this too.

I use white vinegar in my pie crust recipe.

The first recipe that came to mind was for a Wacky cake, a yummy chocolate cake that I used to make frequently when I was younger. It had vinegar as one of the ingredients. I do not recall using vinegar for any other recipe for baked goods.

I've seen vinegar as an ingredient in so many recipes online - all kinds of recipes, not just sweet things. Interesting!

I've often used vinegar to make buttermilk for cooking and baking but never put it directly in any batter and don't intend to do so.

I have a molasses cookie recipe that was handed down from my husband's grandma and it has 1 tbl of vinegar in it. I don't know what it does as it also has baking soda so I don't think it's related to it rising.

Here is an explanation of how vinegar enhances the rising with baking soda.
And I read it also enhances the flavor!
"When vinegar reacts with baking soda, it creates carbon dioxide bubbles, which act as leavening agents. So as the batter bakes, these tiny bubbles expand, causing the cake to rise and giving it that light, airy texture we all love."
I used to bake a lot and would have definitely tried this if I'd known about it back then.
