@SaveTheTurtles put a spoon of baking soda in a glass. Add a spoon of vinegar. Watch how they react and the bubbles that form. That should explain how vinegar and baking soda helps as a rising agent in baked goods.

Never used vinegar in baking.  But, I do make a Greek Lentil soup and it suggests topping your serving of the soup with a splash of vinegar.  And it is so good.

@on the bay  I had a very good friend that has passed and she used vinegar in all her baking.

 

I was over at her home one day and she was making banana bread and splashed in some white vinegar. I had never seen or heard of anyone doing that. Now when I bake anything I do the same thing.

 

I was already in my 40's when my friend enlightened me to this practice. You're never too old to learn. Smiley Happy

@mildoo  We have a nice restaurant/diner near us that hubs and I like the food a lot. It is Greek owned. We are pretty friendly with the wife that serves as the hostess to seat you.

 

I ordered lentil soup once and she said "do you want to know how the Greeks eat it?" I said, sure. She then came back with red wine vinegar and splashed a healthy shot into my bowl.

 

Well, I tell ya it was delicious. I would have never thought to do that. I bet yours is delicious too.Smiley Happy

@KailaS ---yes, I make my Grams wacky cake anytime I need a dessert and hers uses white vinegar --always turns out fantastic!!

@on the bay Yesterday I watched a video of Nigella Lawson whipping up a beautiful Chocolate Raspberry Pavlova. She added vinegar after beating the eggs whites and sugar. Nigella stated it was done to ensure the inside would stay gooey and marshmallowy, and the outside crisp. The outcome looked divine.

That is interesting! It seems to enhance the texture and flavor.

I know I have used it to clean everything all over the house and laundry and drains.

And it's an antibacterial too!

a great staple to have for everything I guess!

I use vinegar to make black bottom cupcakes, which is basically the wacky cake batter with a cream cheese filling.

My mother’s pie crust recipe calls for a tablespoon of white vinegar. I use apple cider vinegar in a recipe for almond flour bread.

I use white vinegar in crazy chocolate cake.  Recipe below:

 

Crazy Chocolate Cake

 

Ingredients

  • 3 cups all-purpose flour
  • 2 cups white sugar  (less if desired)
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup vegetable oil
  •  2 tablespoons distilled white vinegar
  • 2 teaspoons vanilla extract
  • 2 cups cold water

Directions

  1. Sift flour, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan.*  Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
  2. Bake at 350 degrees 30 to 40 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

 

 *I prepare cake in a bowl and transfer to cake pan; bake at 350.  Moist cake.

  Frosting:  Buttercream or Chocolate; both are very good. 

 This cake was popular during the depression, and does not have eggs in it.
