Vidalia Sweet Onion Appetizer

Vidalia Sweet Onion Appetizer

1 cup mayonnaise

¾ cup finely chopped Vidalia sweet onion

½ cup fresh grated Parmesan cheese

2 tablespoons Dijon mustard

1 loaf of white sandwich bread

 

Cut bread with 2-inch round cookie or bread cutter and arrange on baking sheet.

Mix all ingredients and spread with a spoon on bread rounds.

Broil on high about 2 minutes until golden brown.

 

NOTE:  I don’t think  the round shape is all that important.  Why not use squares cut from a bread slice?

I remember buying a loaf of small bread rounds for some appetizer I took to a party a couple of years ago but I can't remember who makes them. Probably got them at Stop & Shop since that's where I do most of my grocery shopping. 

 

Eta on second thought they might have been squares not rounds but nevertheless small for appetizers.

Growing up, Dad always had a huge garden. We had sliced onions as a side dish. Mom and Dad would soak slices in apple cider vinegar for an hour before dinner and then drain them. My dad now does this with vidalia onions since he can't garden anymore.

My Mom would marinate onion and cucumber slices in vinegar and serve them quite often, because Dad was an onion lover. 

 

She also served whole green spring onions because he loved to eat them whole and without anything on them.

I have a similar recipe which uses mayo, parmesan cheese, and vidalia onion, except I add season salt and spread it on little cocktail rye bread. It's one of my favorite appetizers ever! It might sound like an odd combination but it is so addicting

@novamc1 - I love Vidalia onions! I make a similar dip too, but your recipe sounds much better. When I "entertained" I used to buy Pepperidge Farms party rounds. They're so good and they work for everything!  Thanks for sharing with us!  Smiley Happy

@novamc1  Thanks for sharing.  This sounds delicious and I'm heading out to the store in a few minutes may need to pick up a vidalia onion.

I forgot to add, you put it in the oven for a few minutes til golden brown.
