Vidalia Onion Casserole
1/2 cup butter
1/2 cup self-rising flour
salt & pepper to taste
3 Vidalia onions
1 cup medium to sharp cheddar cheese, shredded
Melt butter, then gently stir in flour, salt, and pepper. Peel and slice onions into rings, then dip each ring into the flour-butter mixture and place in a 9 X 12 greased casserole dish.
Stack in the rest of the onions, then top with shredded cheese.
Bake at 375 for 45 minutes until brown and crispy on top. Serve hot.
