Veggies with Sweet Oil Dressing

This is a great side dish in the summer. We like it best with tomatoes, cucumbers, onions and green peppers. Can add chopped fresh basil too. We only have yellow and red cherry tomatoes ready in the garden right now, so I used them. I sliced them so their juice would mix with the dressing. I make it an hour or two before serving and just leave at room temp until then. I stir it every so often to get the dressing on all of the veggies. Store leftovers in the fridge.

Veggies with Sweet Oil Dressing

1/2 cup sugar
1/4 cup oil
1/3 cup vinegar
1/2 tsp. salt
1/2 tsp. pepper
dash of garlic powder

Heat ingredients just to boil to melt sugar. Cool and pour over vegetables like cucumbers, bell peppers, tomatoes, onions, broccoli, cauliflower, celery, fresh spinach, ect.
