I love a good veggie beef soup. I usually make a larger roast beef just to have left over for soup. Then I throw into a large pot, some chopped potatoes, onions, mixed veggies, and my favorite ing to add is cabbage. I chop it up if I have fresh, or sometimes I buy the coleslaw mix. My mom always added cabbage and she would also add chopped rutabaga. I never buy the rutabaga, so don't add that. Then I let the veggies simmer in beef stock & some water til they are tender, add my meat and tomato juice or V8 juice. Then about an hour before I want to eat, I throw in some quick cook barley. One of my favorite meals ever!!!!

This is the kind of soup that I had most weekends when I was growing up.  My mother never wasted any food that could go into the soup. She sometimes used a ham bone or other saved bones.  We loved it! 💜
