I just got an email with a recipe for a veggie sandwich ... sounds good.
Ingredients ...
Toast ..... with:
I "discovered" veggie sandwiches last summer ... always looking for another combo! My favorite has been "hearty" bread spread with either hummus or guacamole, cucumber slices, tomato and a slice of provolone (or other cheese).

@ALRATIBA I make the sandwich with both hummus and avocado, then follow with cucumber, tomato and cheese. This is not a veggie sandwiche but I use either a 22 grain bread or just rye bread, splash balsamic vinegar on each side, then put hummus on one size of bread and then sun dried tomatoes. Place other side of bread atop and sauté in a little bit of either hot butter or olive oil, for about 6-7 minutes on each side, till very crispy. Since you mentioned hummus, I thought I would post this recipe. We love any veggie sandwiche. The California Melt above, sounds great. We put nuts in everything but never thought of putting them on a melted sandwich.

@ALRATIBA Does the receipe call for "slivered almonds" or "almond chunks"? I would think the slivered almonds would be easier (and neater) to eat in a sandwich.

ON NO! That would be a dreaded sandwich for me! I alwaysl take tomatoes off a sandwich (except for a BLT) because they drip and get the bread wet, and avocados because they are squishy! And I'm not fond of cheese on sandwiches (but like cheese with bread or a cracker by itself).

When my husband worked at NSA in the 70's, there was this little hole in the wall health food store not far from where we lived. This store made the best veggie sandwiches for lunch, it was thinly sliced carrots, cucumbers, tomatoes, Colby cheese, alfalfa sprouts on 7 grain bread. I think they used some kind of soy mayo on it. I still make that sandwich after all these years.

You have to get yourself some "hearty" bread.
We have bakery nearby Paris Baguette .... wonderful stuff! Also Trader Joe's and Whole Foods have good bread! It won't get soggy.
If you mash the avocado .... just spreads like peanut butter. And ... just leave off the cheese!

Yum! I love veggie sandwiches, especially in the summer. Lightly grilled (or not) Italian, French bread, or a croissant with fresh tomatoes, cucumbers, thinly sliced onion, Muenster or Provolone, or Provel cheese, mayo and a big chunk of crispy iceberg lettuce! No wimpy thin slice of lettuce for me - I want the crispy chunks from the interior of iceberg lettuce!
