Is she vegetarian or vegan?  It matters, ask before you cook anything.  There's one or two at every gathering now and I generally have a huge vegetable platter anway.  Roast vegetables with olive oil.  Which works for a vegan.  I also make a vegan cornbread Google it, there are tons of recipes.  That's as far as I go.  Holiday cooking is stressful enough.  My Thanksgiving guests always bring the desserts, so the vegan/vegetarians girls (it's always girls) can bring their own dessert.

A favorite side dish for vegans and nonvegans is roasted veggies (red bell pepper, carrots, sweet potato, asparagus, etc) drizzled with balsamic reduction.  Perfection!  It's also beautiful on the table.

All Recipes website has many recipes. I used the search box and typed in Vegetarian. If you use the search box it will give you the option of omitting mushrooms or any other ingredients.

 

Whole Foods website also has delicious recipes.

 Yes, make this stuffed squash for her.   It can be made in advance.  It contains quinoa, which is a protein, and is a festive substitute for a turkey dinner.  It is very tasty!

Quinoa with dehydrated cranberries and almonds. Cook the quinoa in vegetable broth for extra flavor and add cranberries and almonds to taste. I also add mushrooms sometime.
