@IMW  DH has issues with sugar as well. I make his favorite Thousand Island dressing with no sugar ketchup,light mayo and no sugar relish, vinegar and horse radish. So, I could see trying the same relish with an egg salad. He would probably go for that idea.

I make egg salad the same way I make tuna salad.  Eggs, mayo, mustard, sour cream, sweet pickles, celery, onion, green pepper, radishes, green olives, salt, pepper, smoked paprika, splash of pickle juice, dash of garlic powder.  Everything but the kitchen sink!  Definitely not bland and boring.

Egg yolks, sweet pickle relish, as little mayo as I can use to smooth it out, a few drops of lemon juice, salt, pepper (fresh ground).  

 

To that I would add any of the following as the mood strikes: finely chopped black or green olives or a slice on top; capers chopped; pimento; green onion; chopped bacon; truffle salt; hot sauce or curry powder.

Eggs, Hellman's, paprika and sometimes everything bagel spice.   The everything bagel has salt et al.

@River Song  WOW! Kitchen sink for sure, but sounds good!

I tried Valerie's recipe today. I thought it was great! I used the pull and chop to cut up the dill pickles and probably only used a quarter cup of the juice. I also used low fat mayo, some regular mustard, pepper, celery salt and paprika. It tasted like really good deviled eggs! I'm going to use this recipe for my deviled eggs in the future.
