Michigan French Onion Soup ( 7 cups) serves 4-6

3 1/2 lbs of onions sliced thin 7 cups onions

1/4 cup olive oil 

Cook the onions in the olive oil till golden brown about 1 hour

2 cups cider

3 cups beef broth  stir these ingrds. in and simmer 20 minutes (cider,beef broth,water, brandy)

1 cup water

2 tablespoons brandy

Salt and pepper to taste

Freezes well

@ECBG --oh my gosh!!!! that quiche looks AMAZING!!! I want that right now!! I have caramelized onions as per that recipe myself a few times--is not hard just a little time consuming but so incredibly good. the key is to use just a tiny bit of sugar --not alot, but that makes those onions even more sweet than without it. I would put those babies on a pizza or in a soup or on patty melts--in a New York minute!! and in a dip---oh baby!!!Woman Very Happy

@simplyfriends Sounds good!  We do something similar but always add tomatoes of some sort--usually canned diced tomatoes.  We also add a little Italian seasoning, and make sure there is a touch of garlic along the way.

 

We might add a tiny bit of vinegar, lemon juice, or hot sauce to taste to the end.  It sort of points up the flavor.

 

Your soup will be so good and good for you--low fat!  You can also chop some onions and freeze them too!
