Radishes are also delicious roasted in the oven with a ittlle olive oil, either with other vegetables or by themselves.  They become very mild when cooked; no bite at all.

I started using radishes in stew instead of potatoes to lower carbs about ten years ago. They work really well and you don't have to cut them up.

Parsnips have more carbs.

My mother made the best parsnips when I was a kid.  I haven't been able to replicate them.  She browned them in butter in a cast iron skillet but I don't know if she parboiled them first.

Not Doin' It. No Way. Radishes taste like dirt, even if they do look pretty thinly sliced in a salad, or crafted into those pretty Rosette Thingies.

Cauliflower is a good substitute for potatoes as mashed potatoes. Be sure to cook until no crunch left and season as you would potatoes.

@Bookplate   I roast radishes too with a sprinkle of Chicken Montreal seasoning & cracked pepper along with olive oil. Delicious.
