DH has had to go low carb and low sugar, so I'm trying to find good alternatives to some of the high carb items he likes. Two weeks ago I decided to do a beef stew. I found a recipe for "Keto Beef Stew" on Wholesome Recipe Box. It's basically like any other beef stew, except it uses a lot more celery and whole and halved radishes instead of potatoes. I used rather large radishes (the kind they sell with the leaves still attached) to more closely replicate potatoes. When they go the stewing process, they turn white and really look and act like potatoes!
On Sunday I added them to the Pioneer Woman's recipe for Slow Cooker French Onion Pork Chops. Kind of bland to me, but the radishes didn't disappoint. Who knew?

That's interesting. I would have used turnips. They're low carb and a good substitute for potatoes. I never even thought of using radishes in stew.

I have heard of it because I have also looked for alternatives to potatoes in beef stew plus other recipes. I had no idea if would taste good or not. Too expensive these days to try it so you can find out. Think I will use some of both on first go around before I switch the potatoes out.
Thanks for posting. Now if they would only have chuck roast in the grocery store. Have not seen any in a while. Beef stew & pot roast season is coming up. I could eat some of either right now.

Instead of beans in my chili .. I use sauted mushrooms ...

@Big Joanie I love mushrooms and use them whenever I can to bulk up a recipe. I never thought of using them in chili. I'll try that next time.

I have just been omitting pots....and using lots of mushrooms.
Quite honestly, I don't like raw radishes and have never tasted a turnip.
Raw radishes seemed bitter to me....can you describe their flavor when in a stew?

@RespectLife When radishes are cooked in a stew, they don't taste like anything. They just take on the flavor of the gravy - kind of like mushrooms or potatoes. They have a slightly more delicate texture than potatoes, but they are close.
ETA: Turnips still taste like turnips in a stew or soup. And, I really don't know describe that taste. I like them, but not everyone does.

I am pretty sure Jicama is lower in calories and in carbs than potatoes--just a suggestion.
