Using A Nesco To Cook Turkey In...With Bag? Need Advice!

Hello ladies....a question for you turkey experts! I am cooking a 23lbs turkey for tomorrow (never cooked one this large...only a 18lb) I only have one oven and was planning on using my large nesco roaster for the turkey.

On the turkey package this size bird could take up to 6hrs to be done.....has a pop up timer (love those!) but I was reading another thread and lot's were recommending the bags for the turkeys. I have those...should I use one in this roaster?

Reading the bag time table is much shorter....more like 4hrs.

I am just trying to figure out what time to start the turkey cooking at to be done and us ready to eat around 4pm.

When it's just my family I don't stress so much...but with company coming I want to time it better so people arent starving causing I didn't put it in at correct time.

So bag or not to bag? and what start time? 9am? 8am?
