Ingredients
  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2-2 ¼ cups bell pepper red, green and/or yellow, diced
  • 2 teaspoons Italian Seasoning 27CA4769-1304-4524-86B0-7E225C591C2E.jpeg
  • 2 cups low sodium beef broth
  • 14 ½ ounces tomatoes diced, undrained
  • 1 ½ cups tomato sauce
  • 3 tablespoons tomato paste
  • 1 cup basmati rice uncooked
  • 1 cup mozzarella cheese shredded
  • salt & pepper to taste
 
Instructions
  • Brown beef with onion and garlic until no pink remains. Drain excess fat.
  • Add peppers, seasonings, beef broth, tomatoes, tomato sauce, tomato paste, rice and salt & pepper to taste.
  • Bring mixture to a boil, reduce heat to a simmer and cover. Simmer 25 minutes or until rice is tender. (Add more beef broth if needed).
  • Once rice is tender, top with cheese and cover with a lid until melted. Optionally, broil 2-3 minutes.

Stuffed peppers is one of the few things I miss since becoming a vegetarian. I'm going to try this and swap the beef with Morningstar ground beef(less) beef.

You just solved me wondering what to fix for Sunday dinner.  I'm going to try this with ground turkey and chicken broth instead.

@Reconnaissant   DH makes a casserole somewhat similar to this. He slices red and yellow peppers (no bell peppers for me as digestive issues) browned ground beef, canned Italian tomatoes (garlic, seasonings already part of the canned tomatoes) rice, mozzarella cheese and chunked butternut squash.  He has also used turkey burger in place of ground beef on occasion.  Since I'm definitely not a cook, I'm not sure if anything else is included.  Bakes at 350 not sure how long.  It is delicious and one of my favorites.  We are having it tonight for dinner.

@Reconnaissant  I just wanted to add... I have all the ing. for this recipe.  I'm thawing peppers and chopped meat and plan to make it Sat.  Thanks, again!
