Re: Two ingredient lemon cake - and wouldn't you know, I'm missing one ingredient!

There was recently another recipe posted which called for a cake mix, a can of pie filling PLUS 3 eggs. The eggs should give it more volume and substance. I made that one and it was pretty good, definitely cake-like but I thought it needed 2 cans of pie filling. The apples from the pie filling were few and far between.

This recipe made the rounds years ago when it was promoted by WW. I agree with Beebee2-it is not all that great. Sometimes, it's good not to post a recipe until you've actually made it to avoid possible embarassment and/or causing others disappointment. I'm just saying.

Seriously?

Honest it was.

Sadly I must totally agree w/ Beebee2 (and others). I will try any recipe once and don't mind when someone posts a recipe they haven't tried themselves. I LOVE LEMON!! I was the one who decided to try it...and the texture was just awful. It wouldn't cut...just mushed up. It was sticky (beyond what Angel food cake usually is). Couldn't even get DH to eat it and he is a sport about eating just about anything! Had to trash it.

Hope it works for others but I couldn't/wouldn't recommend.

Thanks Harpa for that homemade recipe! I love lemon!! I have been searching for a Lemon Bread Pudding recipe....maybe I can use this! Thanks!

Kachina624, I made that cake with chocolate cake mix and cherry pie filling. It was one of the best and moistest cakes we have ever had, and there are so many possible combos!

Re: Two ingredient lemon cake - and wouldn't you know, I'm missing one ingredient!

Posting an update:

Yesterday I made the pineapple version for my husband. It was one box Angel Food mix and one 20 oz. can crushed pineapples with the liquid.

It looked beautiful, smelled nice and he enjoyed it. It was way too sweet for me and I didn't care for the texture. I guess it's just a matter of preference, because my husband loved it.

I don't mind if the poster hasn't tried it as long as they tell us that & tell us where the recipe came from. The OP clearly hadn't tried it yet (:

Re: Two ingredient lemon cake - and wouldn't you know, I'm missing one ingredient!

If you are looking for a cake mix + ???? Lemon recipe this is one I have used and like.

Warm Lemon Pudding Cake

Yum!

1 package (18 Oz. Package) Yellow Cake Mix

Additional Required Ingredients Specified In Mix Package (typically Water, Eggs And Oil)

2 packages (3.4 Oz. Package) Lemon Flavor Instant Pudding

? cups Sugar

2 cups Cold Milk

1- ¼ cup Water

1 dash Powdered Sugar For Garnish

Heat oven to 350ºF.

Prepare cake batter as directed on the package using ingredients as needed in directions on box (you’ll typically need water, eggs, and oil). Pour into a 13×9-inch baking dish sprayed with cooking spray.

Beat dry pudding mix, granulated sugar, milk and water with a whisk for 2 minutes; pour over the batter in the dish. Place the baking dish on a baking sheet. (The baking sheet will catch any sauce that might bubble over the sides of the dish as the dessert bakes.)

Bake 55 minutes to 1 hour or until a toothpick inserted in the center comes out clean. Cool 20 minutes. (Sauce will thicken slightly as it cools.) Sprinkle with powdered sugar. Serve warm. Refrigerate leftovers.
