Two ingredient lemon cake - and wouldn't you know, I'm missing one ingredient!

2-Ingredient-Lemon-Cake

This looks so good, but I don't have the pie filling on hand. I'll make this soon enough, though.

Two Ingredient Lemon Cake

  • 1 (1 lb) package of angel food cake (I used Western Family)
  • 1 (15.75 oz) can of lemon pie filling (I used Wilderness)
  • Fresh Strawberries and blueberries, if desired
  • Whipped Cream
  1. In a bowl, combine the cake mix (Mine had to packets inside, just add both) and the pie filling. Spread the cake batter into a a 9Ă—13 cake pan.
  2. Bake 350 degrees for 20 minutes or until a toothpick inserted in the cake comes out clean. Cool and slice. Top with fresh berries and cream.

House cat, just FYI, I was really disappointed in the outcome when I made this recipe. It was , as the saying goes, neither fish nor fowl, but in this case neither cake nor pudding. The texture and flavor both were a disappointment. I hope others had better results.

Beebee2 I think there are 2 different kinds of angel food mixes...I forget which you are supposed to use. This was a weight watcher dessert when I was on a diet. Maybe that is why it didn't turn out right.

House cat, if you have 2 lemons, it is easy to make your own pie filling:

1 C white sugar

2 tbsp. all purpose flour

3 tbsp. cornstarch

1/4 tsp. salt

1 1/2 C water

2 lemons, juiced & zested

2 tbsp. butter

4 egg yolks

Whisk the dry together in a medium saucepan. Add the water & lemon. Cook over med-high heat, stirring frequently until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl, and whisk in 1/2 cup of the hot mixture. Whisk the egg mixture in with the rest of the hot mixture and bring to boil, stirring constantly until thick.

I would like to try this cake (or whatever comes out), but I don't have the Angel Food mix! Smiley Happy

Thank you, BeeBee for possibly saving me the trouble and thanks Harpa for that info that I can use another time. I absolutely love lemon desserts!

I am so exhausted from cooking this weekend. I'm running the dishwasher for the fifth time since Friday night. I made a batch of lemon bars, using a boxed cake mix. They are cooling now and I'm sitting down. I cut my finger twice today, which is a sure sign that I'm tired. More fun tomorrow!

This recipe made the rounds years ago when it was promoted by WW. I agree with Beebee2-it is not all that great. Sometimes, it's good not to post a recipe until you've actually made it to avoid possible embarassment and/or causing others disappointment. I'm just saying.

I've not tried this one, but have often made the one calling for a box of angelfood cake mix and a 20 oz. can of crushed pineapple in juice mixed and baked the same way - love that one.
