Light and luscious in the summer when you don't want to heat up the kitchen!

8 oz. smoked turkey, sliced thick (2-4 slices)--cut into julienne strips

1 head Romaine lettuce--torn in bite size pieces

3 peaches, nectarines or apricots--sliced

2 celery ribs--sliced

1/2 c. sliced red onion

1/2 c. walnuts (toasting in 350* oven or on stovetop a few min. enhances flavor)

feta cheese--5-6 cubes, (or a handful, crumbled)

Dressing: Whisk together--

juice of 1-2 limes

3 Tb. olive oil

salt (optional)

Serve with or without crusty French bread!
